There used to be an award winning chili recipe here...

Post by pneumagger »

Where'd it go?

It used like pork, beef, bacon, anaheims, habaneros, jalapenos, ...
I think it was titled "Award Winning Chili" or something.

Now when I try to get the bookmarked thread it says, "You are not authorised to read this forum"
WTF?!? that was my favorite chili recipe. Does anyone have that saved or can they acess that?
Was it archived or something?

How timely.

I've got a long work week coming up, and was thinking about making a big pot of Chili tomorrow so I wouldn't have to cook for a while.

And yes, Chili contains beans.

Nobody claimed chili does not have beans.

Answering imaginary rhetorical questions that nobody was asking... hmph :? .

It was a reference to one of the last posts in the original chili thread.

Which post is the "good" recipe everyone's talking about... the page has like 10 listed.

That sounds good. I guess I need to look in the kitchen for all the "stuff" I'll need...

Here is a more recent permutation of that recipe... it's simmering while I type this. It's a little bit more hearty because the meat is in chunks (chunky meat is more manly). I left all the seeds in my habaneros and also tossed in about 1 Tbsp of Blair's Megadeath in the pot that's on the stove.
1/2 pound bacon
1 pound chuck steak (or deer)
1 pound thin boneless porkchop (or chicken breast)
1/4 cup all purpose flour
3 tsp meat tenderizer.
1 green bell pepper (or pablano), seeded and diced
1 yellow onion, diced
4 jalapeno peppers, chopped with seeds
4 serrano peppers, seeded and chopped
6 habanero peppers, seeded and chopped (or bhut jolokia)
8 Anaheim peppers, seeded and diced
2 cloves garlic, minced
1 cup fresh chopped Cilantro
1/2 squeezed lemon
1 1/2 tablespoons ground cumin
1 tablespoon crushed red pepper flakes
3 tablespoons chili powder
2 tablespoons beef bouillon granules
1 (28 ounce) can crushed tomatoes
2 (16 ounce) cans whole peeled tomatoes, drained
2 (16 ounce) cans chili beans, drained
1 (12 fluid ounces) can beer
3 ounces tomato paste
1 ounce chile paste
2 cups water

Place bacon in a large soup pot. Cook over medium high heat until evenly
brown. Drain excess grease, leaving enough to coat bottom of pot Remove
bacon, drain on paper towels and chop.

Cut beef & pork into 1" or smaller pieces and evenly coat with flour and
tenderizer. Add to pot and toss over medium high heat. When no longer pink,
stir in the bell pepper, onion, jalapeno peppers, habanero peppers, Anaheim
peppers, garlic, cumin, Lemon, Cilantro, red pepper flakes, chili powder,
bouillon, crushed tomatoes, whole tomatoes, beer, tomato paste, chile
paste and water.

Reduce heat to low and simmer for 45 to 60 minutes, stirring occasionally.
Add beans and bacon and continue simmering for another 30 minutes.

*if cooking in crock pot, cook bacon and brown meat separately. Grease Crock
*Pot and add all ingredients, except bacon and beans, to crock pot and cook on
*low heat setting for 7 hours. Add bacon and beans. Cook on low for 1 more hour.

**Prep time may be reduced by using vegtable oil/shortening to brown meat
**and preparing bacon during chili simmering.

My variation:

8 slices pre-cooked bacon (Costco Kirkland brand, since it's pre-cooked, weight doesn't come in to play)
1 pound Ground Beef (whatever I had in the freezer from Costco)
1 pound Ground pork
1 pound Beef Stew steak (cubed from the store, tough crap but we'll be simmering it for a while)

1 RED bell pepper diced (I HATE green bell peppers!)
1 yellow onion, diced (Used 3/4 of onion)
6 jalapeno peppers, sliced with seeds
3 serrano peppers, sliced then lightly chopped (course chop)
3 habanero peppers, sliced then lightly chopped (course chop)
8 Anaheim peppers diced
2 cloves garlic, minced (two tablespoons pre-minced)

1 1/2 tablespoons ground cumin
1 tablespoon crushed red pepper flakes
3 tablespoons chili powder
2 beef bouillon cubes
3 14.5oz diced tomatoes (2 cans drained and blended smooth, 1 can drained not blended for the larger tomato bits)
1 (12 fluid ounces) bottle beer (Flying Dog Classic Ale)
3 ounces tomato paste
1 ounce chile sauce (no paste here, two table spoons)
2 cups water

Place water into 4 quart sauce pan (I think it was 4, the 2qt was WAY too small) with two beef bullion cubes, boil and stir until dissolved.
Reduce heat to low
Add tomatoes, spices, garlic, peppers everything but the meat
Simmer on low while you cook the beef/pork.

Brown cubed steak, add to sauce Do this first to get it into the sauce to simmer and tenderize.
I browned over high heat, covered and reduced to medium to allow the steam to help tenderize.
I added the cubed steak AND the beef broth that collected from the pan.
Brown pork, drain, add to sauce
Brown ground beef, drain, add to sauce

Heat to medium and simmer for 45 to 60 minutes, stirring occasionally. You want a boil at the top to help boil off some liquid and thicken. Medium on my stove worked great.
Microwave bacon 65 second, let cool, crumble
Add bacon and continue simmering for another 30 minutes (I reduced heat to low at this point I didn't want to boil off all the liquid)

Simmer until thick.

I don't seed peppers, I like them HOT, however, I reduced the habañeros to 3 because of that, but still added the 3 serranos. I also wanted other people to be able to eat it :)
I had the same idea as pneumagger by adding the serranos and the cubed meat for a heartier chili.

Decent amount of heat, though not too hot (to me) and tasted great! Mouth not on fire, but broke a sweat!

Consumed topped with Shredded cheddar with buttered bread and a great Flying Dog Porter (Good Beer, No s--t)
