What determines shell length, the barrel or the receiver?
I have a 12 gauge Remington 1100 magnum receiver with a barrel stamped 2 3/4. Obviously I wouldn't try to put a 3" shell in it, but is it possible to put a 3" chamber barrel onto the shotgun and safely use 3" shells (or smaller)?

Yes, you can safely put a 3" chamber barrel on your 1100 magnum receiver and yes you can shoot 2-3/4" shells in a 3" chamber. Here's a link to a 3" 12 gauge barrel at Midway: http://www.midwayusa.com/product/544727 ... t-rib-blue

It will work that way but if you plan on shooting many magnums you might buy the magnum action bar sleave as it is heavier than the 2 3\4 version to soak up some of the extra umph. It will also work fine with regular 2 3\4 shells too.
The 3 inch barrels not only have the longer chamber but also one gas port versus the two the std barrels have.

I'm a rifleman but for professional reasons I'm having to come up to speed on shot- and slut-guns at a specialist level real quick. The advantage is that in a room of master shotgun men I'm the new kid on the block and seeing as we respect each other I'm learning quick!
JREINKE is right on the mark. In fact, I'd go further - go get a modern 3 1/2" weapon.
On the basis that you ask the proffi where you're buying your shells or parts and YOU'VE CHECKED YOUR GUN FIRST, the barrel has no influence on the length of the shot- or slug-gun shell. It's the mag on a semi or the receiver where the hassles start. On the other hand, think of a breech breaker. Down those babies there's nothin' in there 'cept, and don't forget it!, the barrel might be gettin' smaller n'smaller depending where your shooting on the planet, so in principle you can slide that 2 3/4 or 3 or 3 1/2 in, snap it shut and squeeze away.
At the expense of lookin'' like a lab boffin, I'd add one thing if you're loading and wanting to push the envelope of lenghts (as my team is) and, if you're shooting slugs... A "2 3/4" is approx 2 1/4 inches long from the back of the rim to the end of the crimp, a "3" is 2 1/2 long and the modern "3" is in fact 2 1/2 from tip to tail.
