I am purchasing a kit from White Trash Tac., and I am not sure which baffles would be better. I can get 50 or 60 degree baffles or stepped ones.
The rifles will be a 300 Mag. and a 6.5 Mannlicher. The tube will be 7 1/2 inches with 2 stainless baffles and the remainder in titanium. In your knowledgeable opinion it this a good set up?

I don't think you can fit enough baffles into a 7.5" tube for suppression of the 300wm. A nine or ten inch suppressor @ two inches wide would be more appropriate. I would use 17-4 K baffles that have been welded together or carbon steel, either being heat treated. Titanium would be a good choice if you paced your shots. These will also fair better with extensive welding.
Check out the completed builds section. I know of at least one 300 build that featured step type baffles.

As the good Cpt said, a longer tube would be much better. I would shoot for 8.5"min.
50's are better w/ HV centerfire ammo
Progressively space them, like .75 .7 .65 .6 .55, etc
2 HT 17-4 followed by Ti should be fine.
